Project Description

This limited edition wine emerges from the idea of making a young wine employing the ancestral method of carbonic maceration to which we have given our special touch. This wine is made from the red grape variety of Tempranillo, while the variety used to obtain that touch of freshness is one that we particularly like: Tempranillo Blanco.

In order to reduce the load of vine and to obtain fewer and higher quality grapes we apply pruning techniques from the vineyard.

For these all, HPM (R)EVOLUTION is well appreciated among young people who are not ready for heavy tannins.

GRAPE VARIETY: 90% Tempranillo and 10% Tempranillo Blanco
AGE OF GRAPEVINES: An average of 30 years
GRAPE HARVEST: hand harvesting in crates
WINE ELABORATION: wine produced following Jesús and Tania’s indications. It is elaborated in small open tanks in which the entire process can be better controlled. Pumpings are barely used to preserve grape seeds as intact as possible.
ALCOHOL CONTENT: 14,5% vol.
SERVING TEMPERATURE: 13-15ºC
PERFECT WINE AND FOOD PAIRINGS: White meat, red meat and legumes.

“THE APPEARANCE”, LOOK: Bright and deep picota cherry red.
“THE NOSE”, SMELL: It has a strongly fruity and dainty aroma, with notes of wild fruits and a slightly tropical touch provided by the Tempranillo Blanco variety.
“THE PALATE”, TASTE: A smooth but powerful palate entrance with hints of sweet fruit well balanced with a pleasant acidity. An intense fruit aftertaste.
